Bolani is Afghan street food at its best: a soft flatbread folded around a filling of mashed potato, green onion, spinach and just enough jalapeño to notice, then cooked on a dry griddle until it blisters and crisps at the edges.
Eat it hot, torn and dipped in green chutney or doogh. It reheats beautifully in a dry pan — never the microwave, which steams the crust soft.
Vegan as it comes. The potatoes, onions and jalapeños are sourced from local farms.
